From a chef’s perspective, it was a back to the basics kind of day in Tuscany today. Our adventures consisted of a “how to” lesson on magnificent extra virgin olive oil production from Oliviera Sant’ Angelo, Chianina cattle raising, butchery and farming ethics by Maceleria Ricci and family, and lastly, a demonstration on truffle hunting and preparation deep in the woods of San Giovanni d’Asso. It felt like a full day of reconnecting with the salt of the earth. Being reminded first hand of what it really takes to create and deliver the luxurious products that we have grown so used to having on our doorstep is a sobering experience. After a reflection on today’s activities, the dominating thought that consumes my mind tonight is, those who demand, enjoy and relish such products, have a responsibility to understand where they come from and who the people are that make such luxuries possible for the rest of us.
